Try a Pairing at Oro di Oliva

The oil and vinegar shop in the Village just introduced its new featured pairing, along with a recipe that shows it off.

Oro di Oliva sells olive oil and vinegar, not much else.

Ah, but so many olive oils and vinegars, in so many luscious flavors! How to choose?

Oro let's you taste, so you can find combinations that please you, and also makes informed recommendations.

More than that, Oro offerings a featured pairing of an oil and a vinegar, plus a recipe that shows it off at its best, that changes up every three weeks. And it just did.

"Starting this week, the featured pairing is blood orange olive oil and pineapple balsamic," said Jen Wszalek. "The recipe we're featuring it with is a chicken salad with pineapple vinaigrette,

"Of course, you can just drizzle it over any plain green salad and feature the vinaigrette alone."

Wszalek has worked at Oro, 7606 Harwood Ave. in the Village, for a year and a half.

"I shopped here before I got the job," she said, "and the paycheck supports the habit."

We can give you Oro's featured recipe -- you'll have to stop in, though, for the oil and vinegar.

Chicken Salad with Pineapple Vinaigrette

2 cups cooked chicken, shredded
1/3 cup green onions, chopped
1/2 cup red bell pepper, chopped
1/4 cup celery, chopped
1/2 cup sliced almonds
3 Tbsp. Pineapple balsamic vinegar
2 Tbsp. Blood Orange olive oil
1 Tbsp. soy sauce
1 Tbsp. grated fresh ginger
1/4 tsp. each salt and pepper

Combine in a bowl chicken, green onion, red pepper, celery and almonds. In a small bowl, whisk together pineapple balsamic, olive oil, soy sauce, ginger and salt and pepper. Pour over chicken salad and stir together. Serve over a bed of lettuce or in a lttuce cup.
